Red Velvet Cookies

I love Red Velvet, so when I found a cookies recipe for it I jumped at the chance to make them! And surprisingly I had all the ingredients! 

Ingredients

1 box red velvet cake mix
2 eggs
2 tablespoons butter, softened
2 tablespoons milk
4 ounces cream cheese, softened

Let's Bake

Preheat the oven to 350 degrees. Line a large baking sheet with wax paper or spray with non-stick baking spray. In a large bowl, combine the cake mix, eggs, butter and milk. The batter will be very thick. Drop the cream cheese by the tablespoon into the batter & gently fold in. Don't over mix. Drop the batter by tablespoons onto the baking sheet about 2 inches apart. Bake for 10 minutes or until the cookies are set. Cool for a minute or two on the baking sheet then remove to a wire rack to cool completely.

My Notes

The day before making these I had cut my finger. While making these I thought I had gotten some dough on my fingers as it is very red dough. Licked it off to discover it definitely wasn't dough but blood... which means I couldn't share the cookies with anyone. It's not like I have diseases or anything but it's a little weird. My friend Cat however was kind enough not to care and tried them anyways!!

When baking these, I put the dough on the wax paper like it said and put them in the oven. Went into the living room and about five minutes later realized the apartment had gotten very humid and smokey. Smokey isn't quite the right word. But anyways I looked over at the oven and steam was pouring out of it, I opened it up and it was a pillar of steam. Very strange and totally freaked me out. But nothing was burning and it didn't set off the fire alarm. So I guess these are just super moist cookies!

gosh darn glad I don't have to share these are freaking yummy!

P.S. I do not enjoy recipes that have short cuts. For example using pre-made pie shells, or pastry dough or cake boxes. But in this case I never buy buttermilk or heavy cream so being able to use a box makes cookies like these possible. Plus they are so easy to whip together!!
