All the Pies

We actually made two pies for Pi Day way back in March. But I just got around to editing the pictures! Oops!! Anyways first pie up was

Keylime Pie

I have never had it, didn't think I would like it. And while it was definitely not something I would normally eat, it was pretty good. There are allot of pictures. Shams did most of the pie part!

Ingredients

2 cups sugar, divided
1/2 cup plus 2 tablespoons cornstarch
1/4 tsp salt
1/2 cup fresh key lime juice (in our case we used 1/4 cup lemon and 1/4 cup lime)
1/2 cup cold water
3 eggs, separated
2 tablespoons butter
1 1/2 cups boiling water
1 teaspoon grated fresh lime peel (so I just realize we used 1 tablespoon instead of teaspoon)
Green food coloring (optional)
1/4 teaspoon cream of tartar
Pastry for 9-inch pie

Steps

Combine 1 1/2 cups sugar, cornstarch and salt in 2 quart saucepan. Add lime juice, water, and egg yolks; blend well. Add butter and gradually add boiling water. Bring mixture to a boil over medium heat and cook 2 minutes, stirring constantly. Stir in lime peel and green food coloring, if desired. Remove from heat and cool 20 minutes

Beat egg whites in bowl of electric stand mixer on high speed until frothy. Add cream of tartar and whip until soft peaks form. Continuing on high speed, gradually add remaining sugar, beating until stiff peaks form.

Pour cooled filling into pie shell. Lightly pile meringue on filling and spread to edges. Bake at 350F for 15 minutes, or until lightly browned. Cool completely before serving.

I then attempted to make the crust that comes in the same book. And it was a disaster we didn't end up using it. Mainly because it asked you to divide the dough into to balls and then once cooled roll those out to fit the pie plate. I don't have a rolling pie and one ball would spread out far enough to cover my pie plate. So we tried putting the two back together and roll it out. But it wasn't possible and then it was really stiff and we ended up throwing it out.

So I made a graham wafer crust instead using this recipe

Ingredients

1 1/2 cups finely ground graham cracker crumbs
1/3 cup white sugar
6 tablespoons butter, melted
1/2 teaspoon ground cinnamon (optional)

Steps

Mix graham cracker crumbs, sugar, melted butter or margarine, and cinnamon until well blended . Press mixture into an 8 or 9 inch pie plate.

Bake at 375 degrees F (190 degrees C) for 7 minutes. Cool. If recipe calls for unbaked pie shell, just chill for about 1 hour.

Now the recipe said to bake it but we didn't because we figured the whole thing was getting bake so it shouldn't be that big of a deal. However... the crust and the pie went well together it did end up a little more liquidy then I would have like and if we had baked the shell this probably would have been prevented. (thanks Karen for that tibbit!)

I think the biggest thing we did was we made the keylime part first so that was sitting in the pan while we figured out the crust and we should have done the crust first and then the pie. But now we know for next time.

All in all everyone enjoyed it and we had fun making it!!
